Watermelon Feta Mint Salad (Printable Version)

# What You'll Need:

01 - 5 cups seedless watermelon, cut into 1-inch cubes
02 - ½ small red onion, thinly sliced
03 - ⅓ cup fresh mint leaves, torn or sliced

04 - 150 g feta cheese, crumbled

05 - 2 tablespoons extra-virgin olive oil
06 - 1 tablespoon fresh lime juice (or lemon juice)
07 - ¼ teaspoon sea salt
08 - ⅛ teaspoon freshly ground black pepper

# Steps to Follow:

01 - In a large serving bowl, combine the cubed watermelon, sliced red onion, and mint leaves.
02 - Drizzle with olive oil and lime juice. Sprinkle with salt and black pepper. Gently toss to combine.
03 - Add the crumbled feta cheese and toss lightly, or scatter on top for a decorative finish.
04 - Serve immediately, or chill for up to 30 minutes before serving for extra refreshment.
