# What You'll Need:

→ Pasta

01 - 8.8 oz short pasta (fusilli or penne)
02 - 4.2 cups water
03 - 1/2 tsp salt

→ Strawberry Sauce

04 - 10.5 oz fresh strawberries, hulled and sliced
05 - 2 tbsp sugar (adjust to taste)
06 - 1 tsp lemon juice

→ Yogurt Mixture

07 - 8.8 oz Greek yogurt or plain full-fat yogurt
08 - 2 tbsp honey or maple syrup
09 - 1/2 tsp vanilla extract

→ Garnishes

10 - 1.8 oz fresh strawberries, sliced
11 - 2 tbsp roasted slivered almonds (optional)
12 - Fresh mint leaves (optional)

# Steps to Follow:

01 - Bring water to a boil in a large pot. Add salt and pasta. Cook following package instructions until al dente. Drain, rinse under cold water, and set aside to cool.
02 - Combine strawberries, sugar, and lemon juice in a bowl. Mash roughly with a fork or potato masher. Let sit for 5 to 10 minutes to release juices.
03 - In a separate bowl, stir yogurt with honey and vanilla extract until smooth.
04 - Gently toss the cooled pasta with the strawberry sauce until evenly coated.
05 - Fold in most of the yogurt blend, reserving a few spoonfuls for drizzling.
06 - Divide into serving bowls. Top with extra strawberries, drizzle reserved yogurt, and sprinkle with almonds and mint leaves if desired.

# Additional Tips::

01 -
  • It feels playful and unexpected, like breaking a rule you didn't know existed.
  • The creamy yogurt cools you down while the strawberries add just enough sweetness without being cloying.
  • You can throw it together in under half an hour with ingredients you probably already have.
  • Kids love it because it looks like pasta but tastes like a treat.
02 -
  • Always rinse the pasta in cold water after draining or the residual heat will thin out the yogurt and turn everything soupy.
  • Don't skip mashing the strawberries, the broken fruit releases juice that coats the pasta and ties everything together.
  • Taste the strawberry mixture before adding it to the pasta, some berries are tart and need extra sugar while others are candy sweet on their own.
03 -
  • Use pasta shapes with curves or ridges like fusilli, rotini, or farfalle so the sauce clings instead of sliding off.
  • If your strawberries aren't very sweet, roast them with the sugar at 375 degrees for 10 minutes before mashing to concentrate their flavor.
  • Add a pinch of sea salt to the yogurt mixture, it makes the sweetness pop and balances the whole dish.
