- Bring a large pot of water to a boil. Divide boiling water into separate heatproof bowls equal to the number of colors desired.
- Stir a small amount of gel food coloring into each bowl to achieve vibrant shades.
- Divide dried noodles evenly and cook each portion in colored boiling water for 2–3 minutes less than package instructions. Drain, rinse under cold water, and set aside.
- Melt butter in a saucepan over medium heat and stir in cream cheese until completely smooth.
- Whisk milk, parmesan, cornstarch, salt, and white pepper into the saucepan. Cook, stirring constantly, until sauce thickens to a creamy texture, approximately 5 minutes.
- Add colored noodles to the sauce and gently fold to coat. Keep colors distinct for a cloud effect or lightly swirl for a marbled appearance.
- Immediately portion onto plates and garnish with sliced scallions, toasted sesame seeds, and edible flowers or microgreens, if desired.
