Cranberry Pomegranate Fruit Salad (Printable Version)

# What You'll Need:

01 - 1 cup fresh cranberries
02 - 1 1/2 cups pomegranate seeds (from about 1 large pomegranate)
03 - 2 large oranges, peeled and segmented
04 - 2 medium apples, diced
05 - 1 cup seedless red grapes, halved
06 - 1 cup pineapple, diced

→ Dressing

07 - 2 tablespoons honey or maple syrup
08 - 1 tablespoon fresh lime juice
09 - 1 teaspoon orange zest

→ Garnish

10 - 2 tablespoons fresh mint leaves, finely chopped

# Steps to Follow:

01 - Rinse the cranberries and place them in a food processor. Pulse gently until coarsely chopped (do not puree).
02 - In a large mixing bowl, combine chopped cranberries, pomegranate seeds, orange segments, diced apples, grapes, and pineapple.
03 - In a small bowl, whisk together honey or maple syrup, lime juice, and orange zest until well combined.
04 - Pour the dressing over the fruit mixture and toss gently to coat all the fruit evenly.
05 - Chill the salad in the refrigerator for at least 30 minutes to allow flavors to meld.
06 - Just before serving, sprinkle with chopped fresh mint if desired.
