01 - In a mixing bowl, blend ricotta cheese with melted dark chocolate until smooth and fully incorporated.
02 - Place the mixture in the refrigerator and chill for 30 minutes until firm enough to shape.
03 - Using a spoon, scoop portions of the firm mixture and roll into balls approximately 2.5 cm (1 inch) in diameter.
04 - Roll each truffle in chopped almonds, pressing gently to coat evenly.
