# Additional Tips::

01 -
  • Turns humble leftovers into something that tastes better than takeout
  • Ready in under 25 minutes with ingredients you probably already have
  • Crispy edges on dumplings create this incredible texture contrast
02 -
  • Cold, day-old rice is absolutely required or you'll end up with a gummy mess
  • Resist the urge to stir constantly, let the rice sit against the hot pan for those crispy bits
  • Work in batches if your pan seems overcrowded, or nothing will get properly cooked
03 -
  • Spread your cooked rice on a baking sheet and refrigerate uncovered for at least 4 hours to dry it out properly
  • Pre-chop all your ingredients before heating the pan, once you start cooking everything moves fast
