Divide ground turkey into 8 equal portions and roll each into a ball.

Heat a large nonstick skillet or griddle over medium-high heat.

Place a tortilla on the skillet, then immediately position a turkey ball in the center.

Use a spatula or burger press to flatten the turkey ball evenly across the tortilla to the edges.

Season the turkey with salt and pepper. Cook for 2 to 3 minutes until browned and cooked through on the bottom.

Flip the tortilla so the turkey side faces down.

Sprinkle a generous amount of shredded cheese and a spoonful of crumbled stuffing over the turkey.
