13 - 1/4 cup feta cheese, crumbled

# Steps to Follow:

01 - Preheat oven to 425°F. Line a large sheet pan with parchment paper.
02 - In a large bowl, combine diced sweet potatoes, red bell pepper, and red onion. Drizzle with olive oil and sprinkle with smoked paprika, cumin, garlic powder, salt, and black pepper. Toss until vegetables are evenly coated.
03 - Spread seasoned vegetables evenly on prepared sheet pan. Roast for 20 minutes, stirring halfway through.
04 - Remove pan from oven. Add orange segments and baby spinach, stirring gently to combine with roasted vegetables.
05 - If using eggs, create 4 small wells among the vegetables and crack one egg into each well.

07 - Remove from oven and sprinkle with crumbled feta cheese and fresh herbs before serving.

# Additional Tips::

01 -
  • Everything cooks on one pan, which means minimal cleanup and maximum time to actually enjoy your coffee.
  • The orange adds this unexpected brightness that makes you realize citrus belongs on breakfast plates.
  • It's naturally vegetarian and gluten-free, but feels indulgent enough to serve to guests.
  • You can add eggs or skip them entirely depending on your mood and what's in your fridge.
02 -
  • Don't add the oranges at the beginning; they'll collapse into nothing and taste like regret, not breakfast.
  • Your sheet pan size matters—overcrowding means steaming instead of roasting, and you want those caramelized edges that make this actually taste good.
03 -
  • If your sheet pan is smaller or older, it might cook unevenly; rotate it halfway through the first roast and keep an eye on the corners.
  • The smoked paprika is doing more work than you think, so if you skip it or use regular paprika, add an extra pinch of cumin to compensate for what you're missing.
