# Steps to Follow:

01 - Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
02 - Arrange the sweet potato slices on the baking sheet. Brush both sides lightly with olive oil and season with salt and pepper. Roast for 20–25 minutes, flipping once, until tender and slightly golden. Let cool slightly.
03 - In a small bowl, mix softened goat cheese with 1 tbsp honey and a pinch of cinnamon if using.
04 - Spread a small amount of the goat cheese mixture on each roasted sweet potato round. Top with toasted walnuts and a few thyme leaves.
05 - Drizzle each bite with a little extra honey just before serving.
