Sweet Potato & Goat Cheese (Printable Page)

# What You Need:

→ Base

01 - 2 medium sweet potatoes, peeled and sliced into ½-inch rounds (about 20 slices)
02 - 1 tbsp olive oil
03 - Salt and pepper to taste

→ Topping

04 - 4 oz (115 g) goat cheese, softened
05 - ¼ cup chopped walnuts, lightly toasted
06 - 2 tbsp honey, plus more for drizzling
07 - 1 tsp fresh thyme leaves (optional)
08 - Pinch of ground cinnamon (optional)

# How to Make It:

01 - Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
02 - Arrange the sweet potato slices on the baking sheet. Brush both sides lightly with olive oil and season with salt and pepper. Roast for 20–25 minutes, flipping once, until tender and slightly golden. Let cool slightly.
03 - In a small bowl, mix softened goat cheese with 1 tbsp honey and a pinch of cinnamon if using.
04 - Spread a small amount of the goat cheese mixture on each roasted sweet potato round. Top with toasted walnuts and a few thyme leaves.
05 - Drizzle each bite with a little extra honey just before serving.

01 - Add a thin slice of prosciutto under the goat cheese for a non-vegetarian variation.
