01 -  In a large bowl, combine sweet corn, red bell pepper, and green onion. 
 02 -  In another bowl, whisk together flour, baking powder, salt, and black pepper. 
 03 -  In a separate bowl, beat the eggs and then mix in the milk. 
 04 -  Combine the wet and dry ingredients, then fold in the corn mixture until just combined. 
 05 -  Heat oil in a skillet over medium heat. Drop spoonfuls of the batter into the skillet and flatten slightly. Cook for 3-4 minutes on each side or until golden brown. 
 06 -  For the chili-lime mayo, mix mayonnaise, lime juice, chili powder, and salt in a bowl. 
 07 -  Serve the fritters warm with the chili-lime mayo on the side.
