Spinach and Feta Quesadillas (Printable Version)

# What You'll Need:

05 - 4 large flour tortillas

# Steps to Follow:

01 - In a skillet over medium heat, add olive oil and sauté the minced garlic for about 1 minute until fragrant.
02 - Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt and pepper.
03 - In a bowl, combine the sautéed spinach and garlic with crumbled feta and mozzarella cheese.
04 - Heat a separate skillet over medium heat. Place one tortilla in the skillet and spread a quarter of the spinach and cheese mixture over half of the tortilla.
05 - Fold the tortilla over and cook for 2-3 minutes on each side, or until golden brown and the cheese has melted.
06 - Repeat with the remaining tortillas and filling. Slice each quesadilla into wedges and serve warm.
