In a small bowl, mix paprika, salt, and black pepper.

Rub the pork loin thoroughly with the seasoning mixture. Heat olive oil in a skillet over medium-high heat. Sear the pork on all sides for 2–3 minutes per side, until nicely browned.

Place the onion and garlic in the bottom of the slow cooker. Pour chicken broth over the top. Add the browned pork loin.

Cover and cook on LOW for 3–4 hours, or until a meat thermometer reads 145°F (63°C) internal temperature.

Remove pork from the slow cooker and let rest for 5 minutes before slicing and serving.
