Scrambled Pancake Bites Fluffy (Printable Version)

Fluffy, golden bites for breakfast or brunch, perfect with syrup, berries, or powdered sugar.

# What You'll Need:

→ Dry Ingredients

01 - 1 cup all-purpose flour
02 - 2 tablespoons granulated sugar
03 - 1 teaspoon baking powder
04 - 1/2 teaspoon baking soda
05 - 1/4 teaspoon fine salt

→ Wet Ingredients

06 - 2 large eggs
07 - 3/4 cup milk
08 - 1/4 cup plain yogurt or sour cream
09 - 2 tablespoons unsalted butter, melted
10 - 1 teaspoon vanilla extract (optional)

→ For Cooking

11 - 1 tablespoon unsalted butter or neutral oil for the pan

→ To Serve (optional)

12 - Maple syrup
13 - Fresh berries
14 - Powdered sugar

# Steps to Follow:

01 - Whisk together all-purpose flour, granulated sugar, baking powder, baking soda, and salt in a medium mixing bowl.
02 - Beat the eggs in a large bowl, then whisk in the milk, yogurt or sour cream, melted butter, and vanilla extract until a smooth mixture forms.
03 - Fold the flour mixture gently into the wet ingredients. Stir only until just combined; avoid overmixing to preserve tenderness.
04 - Heat a large nonstick skillet or griddle over medium heat. Add butter or oil and swirl to coat the entire surface.
05 - Pour batter into the pan. As it begins setting, use a spatula to scramble and break the batter into bite-sized pieces, flipping occasionally until evenly golden and thoroughly cooked, approximately 3 to 4 minutes.
06 - Transfer cooked bites to a serving plate. Repeat with remaining batter, adding more butter or oil as needed. Serve warm with maple syrup, fresh berries, or powdered sugar as desired.

# Additional Tips::

01 -
  • Uses basic pantry and fridge staples you likely have on hand
  • Ready in twenty minutes from start to finish
  • Great for meal prepping or making ahead for busy mornings
  • Extra adaptable (try with your favorite berries or even chocolate chips)
02 -
  • High in protein for a breakfast treat
  • Easy to freeze and reheat for quick meals
  • Perfect for little fingers and beginner cooks
  • The addition of yogurt or sour cream is my favorite little trick (It makes the bites amazingly tender and brings a slight tang that tastes like old-school diner pancakes.)
03 -
  • Mix the batter lightly for ultimate fluff (No need to smooth every last lump, let them be.)
  • Use fresh baking powder for best lift (I swap every few months.)
  • Scramble gently and patiently in the skillet (The more you flip and break them up, the crispier and more golden they become.)
