01 - 2 medium carrots, diced
02 - 1 medium onion, chopped
03 - 1 medium potato, cubed

04 - 1 tablespoon olive oil
05 - 1 teaspoon herbes de Provence
06 - 4 flour tortillas

# Steps to Follow:

01 - Preheat oven to 400°F. Combine diced carrots, chopped onion, and cubed potato in a large mixing bowl.
