01 - Preheat a mini waffle maker or standard waffle iron to medium heat.
02 - In a large mixing bowl, whisk together pumpkin puree, eggs, vegetable oil, light brown sugar, milk, and vanilla extract until the mixture is smooth and homogenous.
03 - In a separate bowl, combine all-purpose flour, baking powder, baking soda, salt, ground cinnamon, ground ginger, ground nutmeg, and ground cloves. Stir until evenly distributed.
04 - Add the dry ingredient mixture to the wet ingredients. Stir gently until incorporated, taking care not to overmix. Fold in mini chocolate chips or chopped pecans, if using.
05 - Lightly grease the heated waffle iron with oil or nonstick spray.
06 - Drop heaping tablespoonfuls of batter onto the hot waffle plates, spacing to avoid overcrowding.
07 - Close the iron and cook for 2 to 3 minutes, until bites are golden and cooked through.
08 - Remove baked bites and repeat with remaining batter. Serve warm, optionally dusted with powdered sugar or drizzled with maple syrup.
