Pickle Juice Margarita Popsicles (Printable Page)

# What You Need:

→ Liquid Base

01 - 1 cup (240 ml) cucumber juice (from about 1 large cucumber, peeled and blended)
02 - 1/3 cup (80 ml) fresh lemon juice (about 2 lemons)
03 - 1/2 cup (120 ml) good-quality pickle juice
04 - 1/2 cup (120 ml) silver tequila
05 - 1/4 cup (60 ml) agave syrup or simple syrup (adjust to taste)

→ For Assembly & Garnish

06 - Zest of 1 lemon
07 - 1 teaspoon smoked sea salt
08 - Thin cucumber slices (optional, for visual appeal in molds)

# How to Make It:

01 - In a large pitcher, whisk together cucumber juice, lemon juice, pickle juice, tequila, and agave syrup until well combined. Taste and adjust sweetness if needed.
02 - If desired, place a few thin cucumber slices into each popsicle mold for added texture and appearance.
03 - Pour the liquid mixture evenly into 8 popsicle molds, leaving a small gap at the top for expansion. Insert popsicle sticks and freeze for at least 6 hours, or until completely solid.
04 - Once frozen, mix together lemon zest and smoked sea salt on a small plate. Briefly run the molds under warm water to release the popsicles. Just before serving, lightly moisten the tips of each popsicle and dip into the lemon zest–smoked salt mixture for a zesty, savory finish.

# Helpful Tips:

01 - For a non-alcoholic version, omit tequila and increase cucumber and pickle juice proportionally.
02 - Try adding a splash of jalapeño brine or a few thin slices for a spicy kick.
03 - Pairs well with fresh guacamole, salsa, and light Mexican beers.
