# What You Need:

01 - 200 g dried soba noodles

09 - 1 tablespoon rice vinegar
10 - 1 tablespoon soy sauce
11 - 1 tablespoon honey or maple syrup
12 - 1 tablespoon fresh ginger, finely grated
13 - 1 small garlic clove, minced
14 - 3 tablespoons neutral oil (e.g., grapeseed, sunflower)
15 - 1 teaspoon toasted sesame oil
16 - Freshly ground black pepper, to taste

→ Garnish

17 - 2 tablespoons toasted sesame seeds
18 - 1 teaspoon chili flakes

# How to Make It:

01 - Cook the soba noodles according to package instructions. Drain and rinse thoroughly under cold water. Set aside to cool completely.
02 - Preheat a grill pan or outdoor grill over medium-high heat. Lightly brush peach halves with oil. Grill for 1–2 minutes per side until charred and softened. Let cool, then slice each half into wedges.
03 - In a large mixing bowl, combine the soba noodles, shredded cabbage, cucumber, carrot, and scallions.
04 - In a small bowl, whisk together lime juice, rice vinegar, soy sauce, honey or maple syrup, ginger, garlic, neutral oil, sesame oil, and black pepper until well combined.
05 - Pour the vinaigrette over the noodle and vegetable mixture. Toss well to coat evenly.
06 - Gently fold in the grilled peach slices and chopped cilantro (if using). Transfer to serving bowls or a platter. Sprinkle with toasted sesame seeds and chili flakes if desired. Serve immediately, or chill for up to 2 hours for enhanced flavor.
