01 - 7 oz black corn tortilla chips
02 - 1 medium sweet potato, peeled and diced (about 7 oz)
03 - 1 tablespoon olive oil
04 - 1/2 teaspoon smoked paprika
05 - 1/4 teaspoon salt

06 - 1 can (14 oz) black beans, drained and rinsed
07 - 7 oz sharp orange cheddar cheese, grated
08 - 1.8 oz crumbled cotija or feta cheese (optional)
→ Toppings
09 - 1 small red onion, finely diced
10 - 1 jalapeño, sliced (optional)
11 - 1/4 cup fresh cilantro, chopped
12 - 1/2 cup sour cream or Greek yogurt
13 - 1 lime, cut into wedges
# Steps to Follow:
01 - Preheat oven to 400°F (200°C).
02 - Toss sweet potato cubes with olive oil, smoked paprika, and salt. Spread them evenly on a baking tray and roast for 20 minutes, stirring halfway through, until tender and lightly caramelized.
03 - Arrange black corn tortilla chips on a large ovenproof platter or sheet pan to form an even layer.
04 - Scatter roasted sweet potatoes, black beans, and grated cheddar cheese evenly over the chips.
05 - Bake in the oven for 5–7 minutes, or until the cheese has melted and turned bubbly.
06 - Remove from oven and top with diced red onion, jalapeño slices, and crumbled cotija or feta cheese if using.
07 - Garnish generously with chopped cilantro and dollops of sour cream or Greek yogurt. Serve immediately with lime wedges on the side.
