- Set oven to 350°F and allow to fully preheat.
- In a large bowl, mix flour and salt. Cut in cold butter using a pastry cutter or fingertips until mixture resembles coarse crumbs. Add ice water, and stir gently until the dough just comes together. Divide dough in half, shape each into disks, wrap tightly, and refrigerate for 30 minutes.
- Roll out one chilled dough disk on a floured surface to fit a 9-inch pie pan. Transfer to pan, pressing gently, and trim excess. Return crust to refrigerator.
- Combine granulated sugar, cocoa powder, chopped chocolate, and butter in a saucepan. Melt over low heat with frequent stirring until smooth. Take the pan off heat, then whisk in heavy cream, eggs, vanilla extract, and salt until filling is glossy and uniform.
- Pour chocolate filling into the prepared chilled pie crust, smoothing the surface.
- Roll out the second dough disk. Using a stencil or freehand, cut large ovals for eyes, small holes for nostrils, and a stitched mouth shape. Place cutouts on parchment-lined baking sheet. If desired, brush pastries with egg yolk mixed with black food coloring gel for enhanced color.
- Gently arrange facial cutouts atop the chocolate filling to mimic Jack Skellington’s iconic expression.
- Bake assembled pie for 45 minutes, or until the filling is set with a gentle wobble at the center.
- Allow pie to cool completely on a wire rack before slicing, letting the filling firm for clean portions.
