# What You'll Need:

01 - 16 soft chocolate chip cookies, about 7–8 cm (3 inches) in diameter

02 - 1 liter (about 1 quart) vanilla ice cream, slightly softened

03 - 100 g (½ cup) mini chocolate chips
04 - 100 g (½ cup) rainbow sprinkles
05 - 100 g (½ cup) chopped nuts, such as peanuts or pecans

# Steps to Follow:

01 - If using homemade cookies, allow them to cool completely before assembling.
02 - Line a baking sheet with parchment paper or a silicone mat.
03 - Place 8 cookies, flat side up, on the prepared sheet.
04 - Scoop about 60–75 g (¼–⅓ cup) of softened vanilla ice cream onto each cookie.
05 - Gently press a second cookie, flat side down, onto the ice cream to form a sandwich.
06 - For added flair, roll the sides of each sandwich in your choice of mini chocolate chips, sprinkles, or chopped nuts.
07 - Place assembled sandwiches back on the baking sheet and freeze for at least 1 hour, or until firm.
08 - Serve immediately after freezing or wrap individually in parchment and store in the freezer for up to 1 month.
