In a bowl, whisk together olive oil, lemon juice and zest, garlic, herbs, mustard, salt, and pepper.

Place the turkey breast in a resealable plastic bag or shallow dish. Pour marinade over it, turning to coat evenly. Seal or cover and refrigerate for at least 2 hours, preferably overnight.

Heat grill to medium-high. Lightly oil the grates to prevent sticking.

Remove the turkey from the marinade and let excess drip off. Grill for 6–8 minutes per side, or until internal temperature reaches 165°F (74°C) and the surface is nicely charred.

Transfer to a cutting board, cover loosely with foil, and rest for 5–10 minutes before slicing.
