Custard Toast Breakfast Delight (Printable Version)

Thick bread slices soaked in creamy custard, baked till golden, topped with fresh berries and honey.

# What You'll Need:

→ Bread

01 - 2 thick slices brioche or challah bread (about 1 inch thick)

→ Custard

02 - 1 large egg
03 - 3 tablespoons plain Greek yogurt
04 - 1½ tablespoons honey or maple syrup
05 - ½ teaspoon vanilla extract
06 - Pinch of salt

→ Toppings (optional)

07 - ½ cup mixed fresh berries (strawberries, blueberries, raspberries)
08 - 1 tablespoon sliced almonds or pistachios
09 - 1 teaspoon powdered sugar
10 - Extra honey or maple syrup for drizzling

# Steps to Follow:

01 - Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
02 - In a small bowl, whisk together the egg, Greek yogurt, honey (or maple syrup), vanilla extract, and salt until fully combined and smooth.
03 - Place the bread slices on the baking sheet. Using the back of a spoon, gently press down in the center of each slice to form a shallow well, leaving a border around the edges intact.
04 - Spoon or pour the custard evenly into the wells formed in the bread slices.
05 - Top the custard-filled wells with mixed berries and nuts, if using.
06 - Bake for 12 to 15 minutes until the custard is just set and the edges of the bread are golden and crisp.
07 - Allow the baked bread to cool slightly. Dust with powdered sugar and drizzle with extra honey or maple syrup before serving warm.

# Additional Tips::

01 -
  • The custard turns into this impossibly creamy center while the edges get all crisp and golden
  • It takes five minutes of hands on time but tastes like something from a brunch restaurant
02 -
  • Press down firmly in the center of the bread. I was too gentle once and the custard just spilled off the sides.
  • Watch the edges after 10 minutes. Every oven is different and they can go from golden to burnt fast.
03 -
  • Use day old brioche it holds up better than fresh
  • Set a timer for 10 minutes then check every 2 minutes after that
