03 - 4 cups coleslaw mix (shredded cabbage and carrots)
04 - 4 green onions, sliced

→ Sauce

05 - 1/4 cup low-sodium soy sauce
06 - 2 tablespoons toasted sesame oil
07 - 2 tablespoons creamy peanut butter
08 - 1 tablespoon rice vinegar
09 - 1 tablespoon honey or brown sugar

11 - 1 tablespoon cornstarch
12 - 1/2 cup water

14 - Extra sliced green onions

# Steps to Follow:

01 - In a large pot of boiling water, cook ramen noodles according to package instructions (approximately 3 minutes). Drain and set aside.
02 - While noodles cook, heat a large skillet or wok over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned and cooked through (approximately 5-6 minutes).
03 - Add coleslaw mix to the skillet and sauté for 2-3 minutes, until slightly softened.
04 - In a small bowl, whisk together soy sauce, sesame oil, peanut butter, rice vinegar, honey, sriracha if using, cornstarch, and water until smooth.
05 - Add drained noodles to the skillet with turkey and vegetables. Pour in the sauce and toss everything together.
06 - Stir-fry for 2-3 minutes, until sauce thickens and everything is evenly coated.
07 - Remove from heat. Stir in sliced green onions.
08 - Garnish with toasted sesame seeds and extra green onions before serving.

# Additional Tips::

01 -
  • Everything comes together in one pan after the noodles boil, so cleanup is practically effortless.
  • The creamy sesame-peanut sauce clings to every strand of noodle and bite of turkey in a way that feels indulgent but stays balanced.
  • It satisfies that takeout craving without the wait, the delivery fee, or the guilt of ordering in again.
02 -
  • Do not skip draining the noodles well, excess water will dilute the sauce and make everything soupy instead of glossy.
  • Whisk the cornstarch into the cold sauce mixture before adding it to the pan, adding it directly to the hot skillet will cause clumps that never dissolve.
  • If the sauce feels too thick, add a splash of water and toss again, it should coat the noodles without pooling at the bottom.
03 -
  • Toast your sesame seeds in a dry pan for a minute before sprinkling them on, it brings out a deeper, nuttier flavor that makes a real difference.
  • If you love garlic, add a minced clove or two when browning the turkey for an extra layer of savory depth.
  • Double the sauce recipe and keep extra in the fridge, it is perfect for tossing with roasted vegetables, rice bowls, or even as a marinade.
